Advice on kitchen wall color, please.

We have just begun our kitchen remodel. Presently, the kitchen is completely gutted so I'm unable to send photos of the room itself. The kitchen is 17 x 13.5'. I have attached photos of my flooring choice and back splash. The cabinets are custom oak, with jacobean stain and bead board inset. (Being built now, so no photos). Counter top choice is natural soapstone. Appliances are stainless. Our home is 108 years old and we try to keep a vintage feel in our design elements when possible. I have a high back farm sink with drain board. Island will be topped with hickory butcher block. I have one wall that will be blank, meaning no cabinets. I am struggling with a paint color choice. I know I want it to be neutral but not necessarily white or beige. I would like to choose a historic color. The kitchen opens to the dining room which has basil/cream stripe satin wall covering over white wainscot. I feel like I need a color that will transition easily to the dining room but not necessarily green. Maybe a gray shade? But is that too much gray with all the stainless and soapstone? And how does gray stand up against dark cabinets? Thanks for listening.
